Easy cupcakes


This afternoon Noah helped me to bake some chocolate cupcakes. Plain ones (without a topping) are my favourite, they're a bit lighter and make a great afternoon treat without you feeling like you've overdone it! 
Here's how we made them:

 Ingredients

125g flour (sifted!)
125g Caster sugar
125g Butter
3 heaped tablespoons cocoa powder
2 medium eggs
Some milk


Beat together the butter and sugar in a bowl until light and fluffy, add the eggs, flour and cocoa powder. Gently mix and add some milk if the mixture is too dry.
Divide the mixture between paper cases and bake in the oven for about 12 minutes. This should make about 12 good sized cupcakes! When bakeD, remove the cakes from the oven and pop them on a wire rack to cool. Serve with a dollop of ice cream for a lovely light summer desert!
