Biscuits for a Royal Princess
Everybody loves to hear a new baby has been born but there is something rather special about the birth of a royal princess. For old and young alike, HRH Princess Charlotte's arrival was a special moment for our country and I certainly wanted to join in the celebrations happening around the country.
As mummy to my own two little princes, it was more practical for me to celebrate by baking a batch of tasty biscuits to mark the occasion.

I decided to make some biscuits for the family using baby coloured fondant icing and fresh fruit to decorate them.
Here is a quick rundown of the recipe I used for the biscuits:
Ingredients:
- 100g/3½oz unsalted butter, softened at room temperature
- 100g/3½oz caster sugar
- 1 medium free-range egg, lightly beaten
- 275g/10oz plain flour
- 1 tsp vanilla extractTo decorate:1 packet of fondant icingYellow and pink food colouringFresh fruit to garnish
Method:
1) Preheat the oven to 190C/375F/Gas 5. Line a baking tray with greaseproof paper.
2) Cream the butter and sugar together in a bowl until combined.
3)Beat in the egg and vanilla extract, a little at a time, until well combined.
4 )Stir in the flour until the mixture comes together as a dough.
5) Roll the dough out on a lightly floured work surface to a thickness of 1cm/½in.
6) Using biscuit cutters, cut biscuits out of the dough and carefully place onto the baking tray.
7) Bake the biscuits for 8-10 minutes, or until pale golden-brown. Set aside to harden for 5 minutes, then cool on a wire rack.

To Decorate:
1) Divide fondant icing into two halves, add a few drops of yellow and pink colouring to each half and work the icing until you have a ball of baby pink and baby yellow icing.
2) Roll the icing out with a rolling pin until it is about half a centimetre thick and then, using the same cookie cutters as before, gently cut the icing out and place on each biscuit.
3) To finish, garnish your biscuits with fresh fruit
